This slow cooker chicken thigh dinner makes meal time easy! Chicken thighs, potatoes & veggies cook together in this simple one-pot recipe.
I believe you can’t go wrong with a simple one-pot meal. This instant pot or slow cooker chicken dish comes together quickly and it’s full of flavor.

The Homemade Seasoning
Of course you can always use your preferred seasoning for this chicken dinner but if you’re looking for homemade rotisserie seasoning, mine is included in the recipe box. The seasoning is enough for a little over 3 pounds chicken without having to make any adjustments to the measurements. I like to double or triple the recipe and keep a large batch in my pantry so I have some on-hand for other recipes. This homemade rotisserie seasoning is used in both my turkey legs & whole chicken recipes.

What Cut Of Chicken To Use
This recipe is meant for chicken thighs. I used 3 pounds of bone-in, skin on chicken thighs. Dark meat (thighs, legs) work better with slow cooker recipes because they’re less likely to dry out. Having said that, of course you can always use white meat. If you use chicken breasts (white meat) in the slow cooker, the cook time will remain the same however don’t leave the chicken in the slow cooker when it’s done cooking. The chicken will continue to cook and dry out. Can you use frozen chicken? For the slow cooker, no I do not recommend it however for the Instant Pot, yes you can but increase the initial cook time from 15 minutes to 20 (maybe more depending on the size of your chicken).

What Type of Potatoes To Use
Normally I use waxy potatoes these days with the slow cooker or Instant Pot because they’re less likely to turn to mush during the long cook time. This time I kept it simple and used 4 medium-size russet [Idaho] potatoes. If you use a potato like russet or even sweet potatoes (paleo), I suggest you leave them whole like you see here. Cutting them into chunks will cause them to turn mushy.

Adding Vegetables
The vegetables are added at the end of cook time. This is the same whether you’re using the slow cooker or Instant Pot. If you don’t like green beans, other suggestions include asparagus, broccoli, or even zucchini.
You’re seeing that correctly that there’s NO liquid added to the slow cooker. With the Instant Pot, you will need 1 cup of broth or water for it to pressurize.

Ingredients

- 2 1/2 – 3 pounds chicken
- 4 medium-size potatoes
- 1 1/2 – 2 pounds green beans or asparagus
- 1 cup low-sodium chicken broth (Instant Pot only)
Homemade Rotisserie Seasoning Mix
- 2 teaspoons paprika
- 1 1/2 teaspoons salt
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/2 teaspoon cayenne
Instructions
- Add chicken to the slow cooker.
- In a small bowl, mix together the rotisserie seasonings. Season the chicken with the rotisserie seasonings.
- Pierce the potatoes a few times with a fork. Add the potatoes to the slow cooker on top of the chicken.
- Cook HIGH 2-3 hours or LOW 4-6.
- Remove the potatoes. If you’re using white meat, remove the chicken as well. Add the green beans. Cook an additional 30 – 45 minutes or until green beans are tender.
- Pour 1 cup chicken broth into the pressure cooker.
- In a small bowl, mix together the rotisserie seasonings. Season the chicken with the rotisserie seasonings and add to the pot.
- Pierce the potatoes with a fork, wrap them in foil & add them on top of the seasoned chicken.
- Close lid and seal valve. Sethigh pressureand cook for15 minutes(make sure internal temperature for the chicken is165° Fahrenheit). When done, quick release pressure.
- Using tongs (they will be hot), remove the potatoes and the chicken. Add the green beans.
- Close lid and seal valve. Set high pressure and cook 2 minutes. When done, quick release the pressure.

How long you cook your chicken & potatoes for will depend on their size.
