Depending on the size of your chicken breasts and how much they cook down while in the slow cooker this recipe for Weight Watchers salsa chicken will make between 4 and 6 servings. The great thing about this recipe is you can easily make it into as many servings as you need.

Feel free to double or even triple the recipe. You can also add more chicken and less salsa depending on how you like it to come out.

Cut the recipe in half if you don’t like meal prepping or leftovers. You can easily make this recipe suit however much you need.

Can I freeze the leftovers when making salsa chicken in the slow cooker?

You can absolutely freeze this recipe when you are doing cooking the salsa chicken. You can also prep this recipe in bags for easy meals that come right out of the freezer and go into the slow cooker.

To make this a freezer meal just put the raw chicken and salsa into a freezer bag and lay it flat to freeze. When you want to make this recipe just pull out the frozen chicken and thaw it in the refrigerator overnight or place into the Crockpot to cook from frozen.

Keep in mind that cooking from frozen is not recommended in the Crockpot but can be done in the Instant Pot. It should take about 22 minutes with a natural pressure release at the end to cook from frozen!

To freeze leftovers you can do the same, just place the shredded or chopped chicken into containers or bags, label them, and put them into the freezer for later use!

This is one of my favorite recipes for Weight Watchers meal prepping. It’s simple, cooks without my supervision, and I can use the finished salsa chicken in salads, on wraps or sandwiches, and of course it can be eaten as is with rice, noodles, cauliflower rice, or zoodles.

It pairs great with fresh or steamed vegetables and just about any other sides you can think of, this simple Weight Watchers salsa chicken is a real winner!

What do I need to make salsa chicken in the Crockpot?

You’ll need a Crockpot but you will also need salsa and boneless skinless chicken breasts. Keep in mind that you can use boneless skinless thighs too but be sure to calculate accordingly.

  • 4 cups of your favorite jar salsa or homemade salsa

Instructions

  1. Spoon 1 cup of salsa in the bottom of the slow cooker
  2. Place the chicken on top of salsa
  3. Cover chicken with remaining salsa
  4. Cook on low for 5-6 hours or until internal temp is 165 degrees.
  5. Shred chicken or leave in pieces
